Probably the best known and most recognized of the Italian beans, the Borlotti is a pink/tan marked with red to black streaks. Also known as cranberry beans, these small beans are widely used in the Italian South with orrichette. Some say a substitute can be pinto or red kidney beans, but to me, they don't come close!
