Kalamata olives, tropea, onions, extra virgin olive oil, sunflower oil, garlic, dijon mustard, capers, white wine vinegar, salt. This one is meant as a nod to our other friends on the Mediterranean coast and their impeccable taste. You'll notice that the French version features strong black kalamatas and onions, the latter melding the various flavors and tempering the olives a bit. This tapenade has the French flair, yet I made it with American palates in mind.
