Fresh Orecchiette with Rapini
Ingredients
500 g. Fresh Isola Orecchiette
3 lbs Rapini
3 tbsp My Brother's Olive Oil
3 onions; sliced
1 can Isola Anchovies
1/4 lb Cacioricotta Cheese
Directions
Add Orecchiette and Rapini to salted boiling water. Cook for 5 minutes. Drain and reserve 1 cup of the water.

While pasta is cooking, slice and saute the 3 onions until carmelized. Add anchovies and cook until melted. Add the pasta and rapini to mixture. Salt and Pepper to taste.

Sprinkle with grated Cacioricotta Cheese and serve.
