"Very,very delicious - cold pressed from Coratina olives, the oil has a wonderfully mellow, smooth, slightly sweet almondy flavor with a properly zingy peppery aftertaste. Apparently Coratina olives contain high levels of polyphenols--the health giving properties responsible for olive oil's anti-inflamatory and heart healthy, etc qualities. The same polyphenols help the oil to age well in the bottle and to maintian it's freshness and vitalily over time. A great oil I've been very happy with."
