Aged for two months to a pale yellow, our Pecorino has a high butterfat content for a smoothness on the palate that cannot be equaled on your table! Left to age for at least another two months, this harder version of its soft cousin is bolder and deeper. Since most Pecorino is made from summer's milk filled with the bouquet of the season's lush wildflowers, the flavor also is accented with nature's perfume!
