Fresh Trofie With Basil Pesto and Fresh Cherry Tomatoes

Preparation Instructions:

This veggie dish allows for quick and a delicious Italian dish without going to Italy!

Begin by boiling a large pot of water. In a separate pan heat one tablespoon of olive oil (or enough to coat the bottom of the pan). Cut Cherry tomatoes in half and place (sliced) half facedown into the hot oil. This process shouldn't take too long. You just want to add a bit of color to the tomatoes. A nice hot pan speeds up this process. Add a pinch of salt to the tomatoes.

Once the water comes to a boil add a large pinch of salt and add Isola Fresh Trofie to the pot. The cooking time will take about four minutes. The only sure way to test is to taste. Once the pasta is to your liking remove from heat and drain. Place pasta into a mixing bowl and add Isola Basil Pesto. We used three big tablespoons. Here you can add as much or as little as you would like.

Plate and add Isola Parmigiano-Reggiano. Add tomatoes and fresh basil.
