Amaretti Cookie Bark

Ingredients

  • 6 oz milk chocolate
  • 6 oz white chocolate
  • 1 package of Almond Amaretti Cookies
  • 1 cup of Dried Cranberries
  • 2 tsp coconut oil

  1. Line the bottom and sides of an 9" x 9" square baking pan with non-stick wax paper foil, smoothing out any wrinkles.
  2. Melt the white chocolate and 1 teaspoon of coconut oil in a heatproof bowl placed over a saucepan of simmering water.
  3. Immediately pour half of the melted chocolate into the prepared pan and tilt the pan so the chocolate makes an even layer.
  4. Place in the refrigerator for about 20 minutes, or until the chocolate has set.
  5. Melt the milk chocolate and 1 teaspoon of coconut oil in a heatproof bowl placed over a saucepan of simmering water.
  6. Immediately pour the melted chocolate into the prepared pan and tilt the pan so the chocolate makes an even layer.
  7. Sprinkle the crushed Amaretti Cookies evenly over the chocolate.
  8. Place in the refrigerator for about 10 minutes, then pull out a sprinkle cranberries in to the slightly cooled chocolate.
  9. Place back in the fridge for 10 minutes or until the chocolate has set.
  10. Remove the Bark from the pan by lifting the edges of the wax paper. Peel back the paper and break the bark into small irregular pieces.
  11. Store in an airtight container in the refrigerator for up to two weeks.
