Italian Rum Cake Cups

COOKING TIME: 30 Minutes


  • 1 package lady fingers
  • 3 oz rum
  • 2 cups vanilla instant pudding prepared to package directions
  • 8 strawberries sliced
  • 1 tsp sugar
  • 1 pouch 3 ounces sliced almonds available on baking aisle of market
  • 1 cup of Marscarpone cheese

Preparation Instructions

  1. Separate lady fingers on a work surface. Using a pastry brush liberally paint the lady fingers with rum.
  2. Line small glass bowls or cupcake tray with lady fingers and if needed you can break these up into pieces.
  3. Top with heaping spoonfuls of prepared vanilla instant pudding and Marscarpone cheese, about 1/2 cup per dessert cup.
  4. Sprinkle sliced strawberries with sugar and toss to coat. Top dessert cups with sliced berries.
