Chicken and Penne with Mozzarella Casserole

COOKING TIME: 40 Minutes


  • 3 cloves crushed garlic
  • 1/4 cup My Brothers Olive Oil
  • 1/2 - 1 lbs boneless chicken breast
  • 1- 28 oz can Isola Italian Peeled Tomatoes
  • 4 oz sliced and drained mushrooms
  • 1/2 lb mozzarella cheese
  • salt and pepper to taste
  • 1 lb Isola Penne Rigate pasta
  • 4 oz sliced and drained mushrooms

Preparation Instructions

  1. Sauté garlic in hot olive oil. Add chicken to garlic and olive oil and sauté three minutes on each side.
  2. In separate pot, cook penne al' dente, drain.
  3. In mixing bowl combine tomatoes and mushrooms. Salt and pepper to taste.
  4. In casserole dish add chicken sauté tomato mixture and penne. Top with mozzarella cheese and bake in oven on 325 degrees for 20 minutes.
