Red Snapper con Marsala and Parmigiano Reggiano

COOKING TIME: 25 Minutes


  • 1 small yellow onion chopped
  • 1 - 14oz can Cherry Isola Tomatoes
  • 1 lb Red Snapper
  • 6 tbsp Isola My Brother's Olive Oil
  • 1/2 cup Marsala
  • 1/4 lb Grated Parmigiano Reggiano
  • 1 Tablespoon of Capers
  • 1 Stalk of Zucchini

Preparation Instructions

  1. Sauté onion and Zucchini in My Brother's Olive Oil.
  2. Add Marsala wine cook for 3 minutes then fold in Tomatoes. Cook for 5 minutes.
  3. Add Red Snapper to mix and saute till opaque color.
  4. Finish off by adding the grated Parmigiano Reggiano and capers to top of fish and cook for 2 minutes.
  5. Take off of heat drizzle with My Brother's Oil and serve.
