Isola Sweet Potato Gnocchi with Beets and Blue Cheese Sauce



  • 1 whole beet (cooked)
  • 1 bag of Isola Sweet Potato Gnocchi
  • 3 tbsp My Brothers Olive Oil
  • 16 oz Baby Spinach
  • 2 cloves
  • 1/2 cup chopped onion
  • 2 cloves of minced garlic
  • 1/2 cup of light cream
  • 1/2 cup of blue cheese
  • salt and pepper

Preparation Instructions

  1. In a large pan add water, a pinch of salt, and spinach.
  2. Top off with olive oil to saute spinach, once done place to the side.
  3. in a separate pan cook gnocchi for two minutes and place to the side.
  4. In a large pan add My brothers olive oil, onion, garlic, salt, pepper, and beets.
  5. Saute lightly to soften before adding cream and blue cheese.
  6. After stirring well before adding spinach and gnocchi.
  7. Let gnocchi absorb sauce and reheat(about 2-3 minutes).
  8. Enjoy!
