Seafood Salad Paella



  • 1 Tablespoon of My Brother's Olive Oil
  • 1 chopped red onion
  • 3 cups of Isola Arborio Rice
  • 1 can of Isola Cherry Tomatoes 14oz
  • 1 tsp of minced garlic
  • 1 tsp of paprika
  • 1/2 lemon
  • 2 tablespoons of dry white wine
  • 1 package of Isola Seafood Salad
  • 3 1/2 cups of chicken broth or seafood broth
  • chopped parsley
  • 1/2 cup of Isola Pitted Kalamata Olives
  • 1/2 a chopped red pepper
  • 1/2 cup of peas
  • 1 tsp of saffron
  • salt to taste

Preparation Instructions

  1. In a large frying pan add olive oil and onion then let it soften.
  2. Add in the rice, paprika, saffron and then stir it all together before adding in the wine.
  3. Next stir in the tomato, peas and chicken stock to the pan and let cook for 15 minutes.
  4. When the rice is soften add in the seafood, peppers, olives and let cook for three minutes.
  5. Finish the dish off with by squeezing the lemon over it and scattering the parsley.
